SHARING HERE ONE OF QATAR'S FAVORITE KABSAH.HOPE YOU'D LIKE IT.

Main Dish - Al Kabsah

1 onion, chopped
2 tablespoon oil OR shortening
2 tablespoon Bazar
1 1/2 teaspoon lume aswad (powdered dried lime)
1 teaspoon cardamom
1 pound lamb OR chicken (cut into small pieces)
2 teaspoon salt
3 tomatoes (cut into small pieces)
3 1/2 cup boiling water
2 cups Peshawar rice
Warm water
2 tablespoons oil
2 tablespoons almonds
2 tablespoons pine nuts
2 onions, chopped
1/4 cup raisins

1.In a deep pan saute the onion in the oil until yellowish. Add half the Bazar, lime and cardamom. Stir a little.
2.Add the meat and stir for 3 to 4 minutes; add salt, tomatoes and stir until they are well distributed.
3.Cover the pan and let simmer on a medium heat until the tomatoes are dissolved, turning the meat occasionally.
4.Pour 3 1/2 cups boiling water over the meat and let it boil on a low flame until well done. Remove meat from the water.
5.Soak the rice in warm water for about 15 minutes. Decant the water and add the rice to the meat water. Stir immediately and slowly to keep the rice from sticking to the bottom of the pan.
6.Boil over medium heat for about 3 minutes, then reduce to low and let simmer for about 25 minutes.
7.In 2 tablespoons oil, saute the almonds, then the pine nuts, then the 2 onions, each separately in the same oil.
8.Soak the raisins in warm water for about 15 minutes. Discard the water from the raisins and squeeze them to get rid of any excess water.
9.Add the raisins, the remainder of the Bazar, the lime powder and cardamon to the pine nuts and almonds and stir over a low flame for about 3 minutes.
10.To serve, put the rice in a platter with the meat on top. Decorate the top with the pine nuts and almond mixture. *

METHOD.
In a thick basf pot melt the ghee with the cinnamom and cardamom over medium hEAT.
Crumb the bread in a processor.
Ae to the melted ghee braise for about 25mintues on high heat stirring all the time until it reachds a dart toffee colour.
Combine the milk, condensed milk ,cream, suger , elachi, and saffrnn togther in a bowl , whisk well.
Ae the liquid to the bread and reduce heat,
continue to cook, stirring occasinally until fairly dry.
SPOON ONTO SERVING DISH.
DECORATE WITH ALMONDS AND PISTACHIOS AND SERVE. *

Ingredients
4 cups chopped fresh tomatoes
1 slice onion
4 whole cloves
2 cups chicken broth
2 tablespoons b*tter
2 tablespoons all-purpose flour
1 teaspoon salt
2 teaspoons white sugar, or to taste
Directions
1.In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
2.In the now empty stockpot, melt the b*tter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

30 saltine crackers
2 tablespoons all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 egg
1/4 cup vegetable oil
6 skinless, boneless chicken breast halves
Directions
1.Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coa*se crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well.
2.Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat.
3.One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat.
4.Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

Ingredients:


reciepe for one portion soup

masoor dal 100g
carrot 20g
onion 10g
celery 20g
chicken stock 250ml
cumin powder 5g
termaric poder 5g
salt 1tsp
pepper 1tsp
corn oil 10ml
garlic 2g
lemon 10g
fried bread 10g
Method:
add corn oil in the sauce pan and heat it, add the onion and garlic sautee before getting brown colour add the celery carrot and sautee about 5 min. then add the lentil then sautee after few min add the chicken stock bring to simmer keep cooking till the lentil is over cook, add the seasonin, c*min, termaric,white pepper and salt, remove it from the heat and blend properly.add some lemon juice.fried some bread for garnish and a wage of lemon also for garnish.serve immediately. *

Ingredients
1/3 cup quick-cooking oats
1/3 cup nonfat dry milk powder
1/4 cup toasted wheat germ
1/4 cup packed brown sugar
2 tablespoons sugar
1/2 teaspoon baking powder

1/2 cup egg substitute
1/4 cup chopped walnuts

Directions
In a large bowl, combine the first seven ingredients. In a microwave-safe bowl, melt chocolate and b*tter; cool slightly. Stir in the egg substitute, walnuts and vanilla. Stir into the dry ingredients.
Pour into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar if desired. Cut into bars.

Ingredients
4 (1 ounce) squares unsweetened chocolate
3/4 cup b*tter
2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup chopped walnuts
Directions
1.Preheat oven to 350 degrees F (180 degrees C).
2.Microwave chocolate and b*tter or margarine in large bowl at HIGH for 2 minutes or until b*tter or margarine is melted.
3.Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts.
4.Spread in greased 13 x 9 inch pan. Bake for 35 minutes (do not overbake).

3/4 cup orange juice
1/4 cup lime juice
2 ice cubes

1.Puree the mango in a blender until smooth. Add the orange and lime juices; blend until smooth. Add the club soda and ice cubes. Pulse the blender until the ice cubes are crushed and ingredients are blended.

VEGETABLE ALMOND MEDLEY

3 lb. (4-5 c.) mixed vegetables
1 c. chopped onion
2 med. cloves minced garlic
1 c. chopped almonds
2 c. water
5 tbsp. b*tter
3 tbsp. flour
1 tsp. prepared horseradish
Dash of Tabasco
1/2 tsp. dry mustard
1 tbsp. soy sauce
Salt and pepper to taste

TOPPING:

1/2 c. toasted almonds
1/2 c. fine bread crumbs

Saute onions and garlic in 2 tablespoons b*tter. Saute lightly. When onions are translucent, add vegetables. Add the longer cooking vegetables (cabbage, broccoli, cauliflower, carrots, celery) first, soft (zucchini, peppers, mushrooms) later. Saute until cooked to your liking.
Toast 1 cup almonds. Place in blender with water. Puree until smooth. This is almond milk. Melt 3 tablespoons b*tter and whisk 3 tablespoons flour. Add almond milk and seasoning, stirring constantly, over low heat. Simmer for 10 minutes or until thickened. Stir occasionally during simmering.

Combine sauteed vegetables with almond sauce. Add salt and pepper to taste. Pour into a large b*ttered casserole. Sprinkle with combined bread crumbs and chopped, toasted almonds. Bake at 400 degrees for 15 minutes.

Mattar Palao

Ingredients
1 lb. Green PeasClick to find more about Green Peas
1 lb. Rice Pakistani Basmati
8 oz OnionClick to find more about Onion (Red)
8 oz Tomato
1 t c*min Seed
1 t Cloves

3 CinnamonSticks
t Red Chili Powder
1 t Salt
8 oz b*tter (or vegetable oil)
1 T Chicken base/or 1 knor chicken cube
3 c Water


Preparation
Gather ingredients
Coarsely cut onions lengthwise.
Melt b*tter solids in a stockpot and put onions in and mix.
When onions turn dark brown, add 3 cups water.
Bring water to boil. Simmer for 5 minutes until water turns brown.
Strain mixture through cheesecloth and remove all onions.
Put water back in stockpot and bring to boil.
Add peas, tomatoes, c*min seed, cloves, red chilies, saltClick to find more about salt & cinnamonClick to find more about cinnamon sticks and simmer for 3 minutes. Make chickenClick to find more about chicken stock from base/cube.
Add ChickenClick to find more about Chicken stock and bring mixture to boil
Add rice. Water level should be 1 inch above rice. Add water if needed.
Turn the heat to full.
When the water is absorbed by rice, cover the pot and turn heat to low.
Cook until el dente. (rice grains should be long and separable)

Mutton Curry/kaliyaa

This is a delicious curry and quite easy to prepare. It goes well with rice, parathas, bread, appam, idiyappam, puttu or pulao. You can also make this curry using lamb. Avoid using coconut milk if you wish so. Anyways, you are going to love it!

Ingredients

Mutton/Lamb 1 kg

Onions 2 sliced

Ginger 2 tbsp chopped

Garlic 2 tbsp chopped

Green chillies 3 slit

Curry leaves 2 sprigs

Tomatoes 2 chopped

Cardamom 2

Cinnamon 2 piece

Cloves 2

Meat masala/Curry powder 4 tsp

Turmeric powder 1/2 tsp

Chilly powder 2 tsp

Thick coconut milk 1/2 cup

Water 1 cup

Salt to taste

Oil 2 tbsp

Method

Heat oil in a pressure cooker and add the whole spices. Then add the onions, ginger, garlic, green chillies and curry leaves. Fry till the onions turn golden brown. Add the tomatoes and salt and fry till oil separates. Now add all the spice powders and fry till the aroma comes out. Add the mutton pieces and water. Mix well, close the lid and cook for 15 minutes. Let it cool. Open the lid, mix well and simmer till the gravy is thick. Pour the thick coconut milk, mix well and switch off the flame. Serve hot! *

Chicken Kabab

Chicken Kebab Recipe
Makes 4 skewers

Ingredients:

1 skinless and boneless chicken breast (about 12 oz.)
1/2 green bell pepper (cut into big cubes)
1/2 yellow bell pepper (cut into big cubes)

Marinate:

1 1/2 tablespoons olive oil
1 1/2 tablespoons lemon juice
1/2 1 teaspoon paprika (if you like spicy, use 1 teaspoon)
1/2 teaspoon chili flakes
1/2 teaspoon ground c*min seeds
1/4 of one small onion
2 cloves garlic
1/4 teaspoon salt
1 tablespoon chopped fresh parsley leaves (or dried parsley)

For Grilling:

2 tablespoons olive oil (for brushing)

Method:

Cut the chicken into small cubes (a total of 16 pieces if you will), pat dry and marinate with the ingredients for 1 hour.

Thread four pieces of chicken meat with two pieces each of green bell pepper and yellow pepper (see the picture above for the order) onto a metal skewer or bamboo skewer. Repeat the same and make four skewers. Set aside.

Fire up your outdoor grill (or indoor grill) and grill the chicken kebab until cooked. While grilling, brush the chicken and bell peppers with olive oil. Serve hot.

Cooks Note:

If you use bamboo skewers, soak them in cold water overnight so they dont get burned during the grilling process. *

One of the most popular appetizers,
these spring rolls are bursting with flavor.

Ingredients
3 to 4 pieces of chicken
half cabbage finely julian cut
5 to 6 carrots gratted
4 spring onion sliced
black pepper to taste
salt to taste
soy sauce 3 to 4 tbsp
spring roll wrapper one pack
oil 3 to 4 tbsp


Preparation
boil the chicken pieces and shred them.
Then heat some oil and put the cabbage in it and fry it till it become soft but don't over cook it.
Then do the same thing with carrots.
Do not fry the chicken and spring onion in the end mix all the ingredients together.
Make the rolls fry them and serve them with chili sauce.

Asian chicken and rice.....

Ingredients

* 1/3 cup warm water
* 1/4 cup packed brown sugar
* 2 tablespoons orange juice
* 2 tablespoons soy sauce
* 2 tablespoons ketchup
* 1 tablespoon white vinegar
* 4 cloves garlic, minced
* 1/2 teaspoon crushed red pepper flakes
* 1/4 teaspoon Chinese five-spice powder
* 1 teaspoon grated orange peel
* 2 tablespoons olive oil
* 1 1/2 pounds skinless, boneless chicken breast halves, cubed

* 1 cup water
* 1 cup uncooked white rice
*
* 2 teaspoons cornstarch
* 2 tablespoons cold water
* chopped green onions for garnish

Directions

1. In a bowl, stir together warm water, brown sugar, orange juice, soy sauce, ketchup, white vinegar, garlic, red pepper flakes, five-spice powder, and orange peel until the sugar has dissolved and the mixture is well combined.
2. Heat the olive oil in a large skillet or wok over medium heat, and cook and stir the chicken until the outside is golden brown and the inside is no longer pink, 10 to 12 minutes. Pour the sauce mixture over the chicken, bring to a boil, reduce heat to medium-low, and cover the skillet. Simmer for 30 minutes, stirring occasionally.
3. While the chicken and sauce are simmering, bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Set the rice aside and keep warm.
4. Whisk the cornstarch and 2 tablespoons of cold water in a small bowl until smooth, and stir into the chicken and sauce, a few teaspoons at a time. Let the chicken and sauce cook for about 2 minutes to thicken, then serve over hot cooked rice, sprinkled with green onion.

Broccoli and Rice Stir Fry

Ingredients

* 1 1/2 cups uncooked long-grain rice
* 1 tablespoon vegetable oil
* 1 (16 ounce) package frozen broccoli florets, thawed
* 3 green onions, diced
* 2 eggs, beaten
* 2 tablespoons soy sauce
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper

Directions

1. In a saucepan, bring 3 cups water to a boil. Stir in rice. Reduce heat, cover, and simmer for 20 minutes.
2. Heat oil in a large skillet over medium heat. Saute broccoli until tender crisp, and add scallions(spring onion). Remove from skillet. Scramble eggs; return broccoli mixture to pan. Stir in cooked rice, soy sauce, salt and pepper.

PASTA WITH ASPARAGUS.........


Ingredients

* 1 1/2 pounds fresh asparagus, trimmed and cut into 1 inch pieces
* 1/4 cup chicken broth
* 1/2 pound fresh mushrooms, sliced
* 8 ounces angel hair pasta
* 1 tablespoon olive oil
* 1/2 teaspoon crushed red pepper
* 1/2 cup grated Parmesan cheese

Directions

1. Cook pasta according to package instructions.
2. Heat the olive oil in a nonstick skillet. Saute asparagus in the pan over medium heat for about 3 minutes. Add chicken broth and mushroom slices; cook 3 minutes more.
3. Drain pasta, and transfer to a serving dish. Gently toss pasta with asparagus mixture; sprinkle with Parmesan and crushed red pepper.
