Coconut ney

Ingredients:

coconut 1 cup (freshly grated)
fresh green or red chilies 2 (chopped)
garlic 1 clove (optional)
water 1 cup
Salt as per taste


for seasoning:
vegetable oil 1 tsp
black mustard seeds 1 tsp
urad dhal 1 tsp
curry leaf 1 sprig




Method


Grind all the Ingredients: (except those for seasoning) together.
Blend the mixture until it forms a coa*se paste. Transfer it to a bowl.
Heat the oil and when it is hot, add the mustard seeds and urad dhal.
When the seeds start spluttering, add the curry leaves.
Quicky stir the mustard seed mixture into the pureed coconut mixture.


Tips Serve fresh with dosas, idlis, upma, utthapams, vadas, etc. *

Tomato ney

Ingredients
Tomato 1 lb
Garlic 8-10 cloves
Urad dhal 1 tsp
Mustard 1 tsp
Turmeric 1/4 tsp
Oil 8 tbsp
Asafoetida 2 pinches
Chilli powder 3 tsp
Coriander powder 3 tsp
Salt as per taste



Method


Cut the tomatoes into cubes and grind them to a fine juicy paste.
Grind the garlic to a fine paste.
Heat oil in the pan, and prepare the seasoning with mustard, asafoetida,turmeric and urad dal.
Since more oil is used it stays fresh and tasty for quite a long time.
Add the garlic paste and fry for a few seconds.
Pour the tomato juice into the pan and add the chilli powder and salt to taste.
Keep stirring the contents till all the water is evaporated and the ney becomes very thick.


Tips: Store in an air tight jar in the refrigerator.

Beef Tikka

Ingredients

1/2 kilo cubes of beef
2 tbs unripe papaya (grinded)
1/2 tsp ginger paste
1/2 tsp garlic paste
Salt according to taste
2 tbs yogurt
1 tsp chili powder or 3-4 chilies


Instructions
Mix together all the spices and yogurt and papaya and coat the beef cubes with it.
Leave to marinate for 5-6 hours preferably overnight.
Then barbeque over charcoal.

Instructions

How to Make Fresh Pasta Noodles

Rolling the Pasta

7....A pasta machine is great for rolling and cutting the dough. They are inexpensive and can be found at major kitchen stores or online. If you don't have a pasta machine, a rolling pin will work just fine.

Flatten one of the dough ba11s with the palm of your hand until it's about 1/2 an inch thick and no wider than the slot of the pasta machine. With the slot of the pasta machine on its widest setting (usually 1), turn the handle while feeding the dough into the slot. Gently hold the flattened dough as it comes out of the pasta machine, but don't pull on it.

8...After the dough has completely passed through the pasta machine, turn the slot down to the next smallest setting and pass the dough through the slot. Continue to do this, making the slot smaller by one each time. Don't try to skip a number, as this will only cause the machine to jam and you'll end up with a mess and no pasta.

As you continue rolling the pasta, your sheet of dough will get longer and longer. Try to gently hold the dough as it exits the pasta machine so it doesn't tear. This is a great time to have an assistant help you.

Continue passing the dough through the machine until it's about an 1/16th of an inch thick.

Cutting the Dough Into Pasta

9...After rolling the dough out to the desired thickness, it's time to cut the dough into pasta. Most pasta machines, come with an adapter that cuts the dough. If you are working on a table, you may wish to cut your dough in half to make it easier to handle.

Feed the dough into the cutting blades. Try to have your hand under the center of the cut dough, so you can pick it all up in one bunch.

Alternatively, if you don't have a pasta machine, you can fold the rolled dough into a square. Cut the open end of the square a quarter inch at a time. Immediately, unroll the pasta and lay flat.

Drying the Pasta

10..Immediately after cutting the dough, hang the pasta on a dowel or other object (a clothes drying rack works great). You can also lay the pasta flat on a towel, but it is more likely to stick together.

The pasta can be used right away or will keep up to a week.

Ingredients:

Leftover chappatis
1/2 tin baked beans
1/4 cup cheese
4 tbsp sauce For Filling:
1 carrot
5 french beans
1/4 cup boiled peas
1 capsicum
1 large floret of cauliflower
1/2 cup cabbage shredded
3 green chillies
1/4 tsp. garlic paste (or 5 flakes crushed)
1/4 tsp. ginger paste (or 1/2 piece grated)
1/2 tsp. lemon juice
1/2 tsp. soya sauce
1/2 tsp. tomato ketchup
Salt to taste
1 tbsp. oil

Method


Clean and chop carrot, capsicum, cauliflower, french beans, into thin 2 long slivers or sticks.
Chop green chillies also into small pieces.
Heat oil in a nonstick pan.
Add green chillies, garlic, ginger, stir.
Add all other vegetables, stirfry on high till veggies are tender.
Add soya, tomato sauces, lemon juice, salt, sugar, stir.
Divide filling into 6 portions.
Take on chappati, put filling in half portion.
Spread over half area evenly.
Sprinkle some cheese.
Fold empty half portion over.
A half round with stuffing inside should result.
Apply a little water to the inner edges, press together to seal.
Arrange them in a shallow ovenproof dish
Pour a half tin of baked beans in tomato over them, from tin.
Sprinkle cheese, sauce
Bake in preheated oven (200oC) for 10 minutes.
Serve as a casserole dish *

2-Aik pan mein thora sa oil lay ke germ kerein us mein Pehley capsic*m dal ker fry kerein us ke baad spring onion dal ker fry kerein us mein thora salt aur black pepper daalain , thanda honey ke liye rakh dein ,
3-Aik bowl mein chicken lein us mein fry ki hoi vegetables daalain phir cheese daalain achee terah mix kerein. 4-Ab samosa patti lein aur us ko samosey ki shape dein us mein chicken bhareyn aur maidey aur pani ki lay se us ko chipka dein,
5-phir oil mein golden brown kerein.
6-podiney ki chaatni ya tomato ketchup ke sath serve kerein *

Fig and Lemon Chicken




Chicken thighs roasted with figs and lemon slices in a lemon, vinegar and brown sugar glaze. Yet it's easy and delicious.

Ingredients
12 chicken thighs
2 lemons, 1 sliced, 1 halved
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 pounds dried figs
salt to taste
1 teaspoon dried parsley
1 tablespoon chopped fresh parsley

Directions
Preheat the chicken thighs in oven to 400 degrees F (200 degrees C).
Squeeze juices from halved lemon into a small bowl, then stir in brown sugar, vinegar and water; set aside.
Place figs and sliced lemon segments in the bottom of an 11x16 inch baking/roasting dish. Arrange chicken thighs on top, then pour vinegar mixture over chicken. Finally, sprinkle with salt and dried parsley to taste.
Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter. Skim fat from cooking juices, then pour over chicken as sauce. Garnish with fresh parsley and serve. *

Seafood Nest


1 teaspoon Ginger paste
For frying Oil
To taste Salt and Pepper
Shrimp (de-vined, washed)
250 grams White Fish (sole, surmai or betki), cut into inch cubes
1 teaspoon Chopped Garlic
100 grams Small Broccoli florets
100 grams Peas
4 tablespoon Shredded cabbage
4 Babycorns, thinly sliced
1 tablespoon
Soya sauce
2 tablespoon Sherry
1 teaspoon Sugar
2 tablespoon Oyster sauce
1 tablespoon Knorr Make-a-meal Chinese chilli
cup Water
100 grams Noodles
For frying Oil
24 inch diameter wire strainers

METHOD

In oil, stir-fry ginger for half a minute.
Add shrimp and fish, cook for 2 minutes till shrimps are curled.
Remove and keep aside.
Add more oil to pan, stir-fry garlic, broccoli, babycorn, peas and cabbage for 2 minutes.
Blend in soya sauce, sherry and sugar. Cook for 2 minutes.
Add oyster sauce and the meal powder to vegetables and cook until gravy has thickened.
Gently fold in seafood, reheat, and place in noodle basket when
serving.

For noodle basket:
Cook the noodles in salted, boiling water till well done. Drain and cool.
To make the basket, place noodles in one strainer
and press down with second.
Immerse both baskets in enough oil to cover baskets; fry on medium heat till crisp.
Remove and drain excess oil. *

Crispy Oriental Chicken Wings

Ingredients

Chicken wings, disjointed (1 1/2 lbs.),
Corn flakes (2 c finely crushed),
Egg (1 med.),
Soy sauce (1/2 c.),
Onion, finely diced (1 med.),
Garlic powder (2 tbsp.),
Ginger powder (1/4 tsp.)

Method Of Preparation:-

Firstly beat the egg in the bowl and mix soy sauce, ginger powder, garlic powder and egg. Set them aside and, mix the crushed corn flakes and diced onions. Now dip the each wing in the soy sauce and then roll them on onion and corn flakes mixture. Now take a glass baking dish and cover and cook the wings on the high for 20 minutes or until cooked

Chicken Tikka Recipe



2 pounds chicken legs, thighs or
1 teaspoon salt
1 teaspoon red chili powder
1 teaspoon coriander seeds, roasted, ground
2 teaspoons garlic minced
2 teaspoons ginger, fresh grated
2 tablespoons lemon juice or white wine vinegar
1/2 teaspoon black pepper ground
vegetable oil


Remove the skin and make 23 deep cuts in each chicken piece.
Roast the corriander seeds in a hot cast iron skillet.
After cooling, grind to powder.
Mix all dry ingredients with the lemon juice or vinegar and make a paste.
Put this paste onto chicken pieces and leave them for at least 4-5 hours to marinate.
Better if leave in refrigerator over night.

Grill method

Rub each piece of chicken with a few drops of vegetable oil. Grill the chicken using indirect heat over hot coals.

Oven method

Put the chicken pieces (with the paste still on it) onto a broiler tray and cover them with aluminum foil.
Put the tray into a medium oven (350 F) for 30 minutes.
Then remove tray and pour off any liquid.
Baste chicken with 2 tablespoons of oil and return to the oven for another 15 minutes until outside of chicken is crispy.
Serve hot. Enjoy
